Il fut un temps o\u00f9 la gastronomie cherchait son inspiration dans les terroirs, les saisons, les march\u00e9s. En 2026, elle l\u00e8ve les yeux. Plus haut. Beaucoup plus haut. La haute cuisine s’enroule d\u00e9sormais autour d’une nouvelle obsession : l’infini cosmique. \u00c0 Tokyo, Paris, Duba\u00ef, New York \u2014 et bient\u00f4t en orbite basse \u2014 les grandes maisons r\u00e9inventent l’exp\u00e9rience du d\u00eener comme on imaginait autrefois un voyage.<\/p>\n\n\n\n

Quand l’assiette devient constellation<\/h2>\n\n\n\n

Le mouvement n’est pas anecdotique. Les chefs \u00e9toil\u00e9s parlent d\u00e9sormais de \u00ab plats c\u00e9lestes \u00bb, de \u00ab dressages gravitationnels \u00bb, de \u00ab pairings stellaires \u00bb. Loin du gimmick, il s’agit d’une v\u00e9ritable grammaire visuelle : un point lumineux d’huile de truffe, une poussi\u00e8re d’or comestible figurant la Voie lact\u00e9e, une \u00e9mulsion sph\u00e9rifi\u00e9e \u00e9voquant Saturne et ses anneaux. L’assiette n’est plus un cadre, c’est une fen\u00eatre.<\/p>\n\n\n\n

Cette esth\u00e9tique r\u00e9pond \u00e0 une demande des convives haut de gamme : ils ne veulent plus simplement bien manger, ils veulent vivre quelque chose<\/em>. Et ce quelque chose doit, plus que jamais, \u00eatre indescriptible. L’espace, par nature inatteignable, est le dernier territoire que la gastronomie pouvait encore conqu\u00e9rir.<\/p>\n\n\n\n

Trois signatures de la tendance<\/h2>\n\n\n\n

Ce n’est pas l’espace qui descend dans nos cuisines. Ce sont nos cuisines qui apprennent \u00e0 respirer le vide.<\/em><\/p>Anonyme, chef trois \u00e9toiles, 2026<\/cite><\/blockquote>\n\n\n\n

D’abord, la mati\u00e8re elle-m\u00eame \u00e9volue<\/strong>. Algues spiral\u00e9es rappelant les galaxies, glaces \u00e0 l’azote sculpt\u00e9es en plan\u00e8tes, encres de seiche transform\u00e9es en trous noirs gustatifs : le produit se met au service de l’imaginaire spatial.<\/p>\n\n\n\n

Ensuite, la mise en sc\u00e8ne du service<\/strong> se ritualise. Le ma\u00eetre d’h\u00f4tel ne pr\u00e9sente plus un plat, il introduit un voyage<\/em>. La carte se feuillette comme un atlas c\u00e9leste. Le sommelier devient navigateur.<\/p>\n\n\n\n

Enfin, la technologie immersive<\/strong> s’invite \u00e0 table. Plafonds projectifs, brumes parfum\u00e9es, sonorisations spatialis\u00e9es : le d\u00e9cor n’est plus un \u00e9crin, c’est un cosmos.<\/p>\n\n\n\n

Et Galaxia dans tout cela ?<\/h3>\n\n\n\n

En posant son restaurant sur orbite terrestre basse, l’enseigne propose ce que personne d’autre ne peut offrir : non pas l’\u00e9vocation de l’espace, mais l’espace lui-m\u00eame comme salle \u00e0 manger. Au fond, l’espace culinaire est moins une mode qu’un sympt\u00f4me. Il dit notre besoin d’\u00e9l\u00e9vation \u00e0 un moment o\u00f9 le monde se replie. Il dit notre soif d’horizons quand les fronti\u00e8res se ferment. Il dit, surtout, que le luxe contemporain n’est plus dans la possession mais dans la travers\u00e9e \u2014 d’un instant, d’un paysage, d’une \u00e9motion qu’aucune autre ne pourra reproduire.<\/p>\n\n\n\n
